For the APN value you need to contact your sim card provider.
From the GC101 manual:

2. Set up APN (Access Point Name) that is provided by your GSM provider.
If you are not sure about your APN, please refer to the APN table in the CD or contact your local mobile phone service. After
sending the SMS command, GC-101 will response a message to your cell phone to see if the GC-101 does receive the command.
Please note that the GC-101 is not able to determine the validity of the APN.

I see there is no monthly fee but I am not quite sure HOW to set up the APN etc. Do you have really simple instructions to do this please and can you e mail them to me

There will be a monthly cost for your sim card which you will have to source yourself. Otherwise this service is free.
